Kardens Karadeniz Lokantası-All about the beans

Kardens is in the venerable tradition of a regionally oriented cafeteria. They serve Black Sea style meat and vegetable stews from huge cauldrons in the back of the restaurant. While its a great place to sample a variety of Black Sea staples, muhlama (cheese fondue), Karalahana çorbası (swiss chard soup), hamsi (pan fried sardines) to name a few, it's the beans that must be tasted. White beans in a tomato sauce are a staple in Turkish homecooking, but the Black Sea does it best. Large white beans are cooked in a thick, buttery tomato gravy with stewed beef. It's a winning formula and Kardens sticks to it.
